Banana Split


File this under: Easiest Recipe Ever. (Ignore that, Lucy. For your loaf, I spent hours in the kitchen)
Banana Bread is one of my favorite all-day breakfast treats. I am the person who comes in the kitchen and slices off slivers throughout the day until there is nothing left - but my guilt and 2" on my waistline.
I can thank Pinterest for this gem. Banana bread (originally posted HERE) is taken to a whole new level with a streusel topping. Not to mention, it is the perfect way to use up those haggard black bananas in the kitchen.

Banana Bread with Streusel Topping
3 very ripe (the more speckled and ugly the better), mashed
2 cups flour
3/4 cup sugar
3/4 tsp baking soda
1/2 tsp kosher salt
1/4 cup buttermilk
2 eggs
6 tbsp butter, melted
1.5 tsp vanilla extract
1/2 cup pecans, chopped
Topping
1/4 cup flour
1/4 cup sugar
2 tbsp butter, softened
1 tsp cinnamon

Preheat oven to 350. 
Whisk together flour, sugar, baking soda and salt. 
In another bowl, mix together bananas, buttermilk, vanilla, butter, and eggs.
Fold the egg mixture into the dry ingredients. When well mixed, add pecans and mix. 
To make the topping, mash the softened butter with a fork into the flour and sugar. Add the cinnamon and mix until well combined and crumbly. 
Pour mixture into a buttered loaf pan and sprinkle with streusel. 
Bake for 55 minutes or until a toothpick comes out cleanly. 
Let cool for 5 minutes (if you can) and serve!
