Home on the Ranch

Since Mr. Fonty and I started dating, I've spent every New Year's and 4th of July in the Hill Country of Texas. The Fontys have the most amazing group of friends out each year to celebrate, and over the years, they have become like family to me. At our wedding, my family couldn't get over how warm and fun this group is - the copious wine and beer drinking doesn't hurt either. Thanks for a great weekend!

When I met Tommy & Kristen they hadn't even gotten married yet. Now they have this cutie pie, Jack. I'm pretty sure someone was holding him all weekend long.

In the Kitchen: Pesto Perfection

This post started out as an ambitious homemade pesto topping homemade pasta tutorial. Sadly though (especially for the Fonty diners), my homemade pasta turned out dense and disgusting. Once I have homemade perfected, I'll post that portion. But the pesto turned out perfectly, so here we go:

Homemade Pesto
4 cups packed basil leaves

1 cloves garlic (you can add more. I am not a raw garlic fan)
½ cup Butter cut in small cubes
2 cups Parmesan
1/2 cup Pine Nuts
Olive Oil
Salt

Soak the basil leaves in cold water. Dry very well (I like to use a salad spinner) and place in food processor. Top with butter, garlic, then Parmesan. Pulse until the mixture looks like little pebbles. Slowly add olive oil until the the pesto becomes a paste.  At this point, you can adjust the seasonings and add salt. Add the pine nuts and pulse again.
Put into jars. This pesto can be stored in the freezer for up to a year. Just be sure to get all the air out and top with extra olive oil to prevent oxidation.

Soaking Basil

You never have too much Parmesan

Oooh look at my lovely green color! I am so pretty.

Ready for gifting / freezing / scarfing immediately

Since I was trying to use up lots of basil, I incorporated basil into our protein for the evening. This fish is way too easy and very delicious. Pull out your frozen basil in the morning, and you have a great week night meal.

Panko Crusted Basil Halibut (serves 2)
2 Halibut fillets
1/2 cup pesto (this is a total guess. Just have enough to cover both sides of each fillet with pesto)
Panko Breads crumbs
Olive Oil

Preheat oven to 350
Smear the pesto on both sides of the fish. Cover entire fish generously in Panko Bread Crumbs. Drizzle with a tiny bit of olive oil.
Bake for 15-20 minutes until fish is cooked through and flaky.

Ooops...

My apologies for no posts! I had a computer charger melt down, but don't dispair, the world is alright again.

What I'm Reading: Penny Vincenzi - The Spoils of Time Trilogy

Mr. Fonty's mom got me HOOKED on the author Penny Vincenzi last summer. I read 5 books nearly back to back in a month. These books were meant to be read while sitting poolside, sipping something blended.
The Spoils of Time Trilogy (Yes, even the trilogy title is indulgently trashy) begins in London at the turn of the century, and follows the Lytton family (or dynasty may be more appropriate) through 4 decades, 2 wars, and countless affairs and risky decisions.
No Angel: Begins in the early 1900's with Lady Celia purposely getting pregnant so her aristocratic parents will be forced to allow her to marry her low-class love, Oliver. I know, genius plot lines.
Something Dangerous: The series continues and follows the now grown, glamorous Lytton children as they make the same poor decisions of their mother.
Into Temptation: Crossing continents, this book takes place in New York and London cataloging the lives of 4 generations.

My only warning is to have all 3 books on hand, because the minute you finish one you will want to start the next. Buy the set HERE
